How is this white wine from Salento made?
Generally speaking, the Vermentino Vecchia Torre is entirely made from white grapes from Salento, in Puglia, cultivated around Leverano. Specifically, although it is not an autochthonous varietals of Salento, it has adapted very well to our territory. So much so that, we can say that some of its typical taste, between citrus and mineral, emerged thanks to the particular geographical position of the territory of Puglia.
That is to say, this white wine has found in the Salento coasts the ideal climatic conditions for its development. Certainly, the temperate climate of the Mediterranean coasts, the sun and the hilly lands, the soil and exposure to sea winds make Salento the ideal place for its cultivation and give it unique flavors and aromas.

“Firstly, it is very important to harvest the grapes very early in the morning. Then, white grapes are de-stemmed and pressed very softly. In particular, the vinification process involves a pre-fermentative maceration phase of 12 hours at 4 ° C. Subsequently, there is a fermentation phase at low temperatures in stainless steel tanks. For instance, it is a vintage wine, to be drunk young, fresh. Providing that, this white wine from Salento will maintain its freshness for 2 years.”
Apparently, it is straw-yellow in color, with faint greenish reflections. Its aroma is very intense, with delicate notes of citrus, sage and Mediterranean herbs. For the palate it is harmonious and sapid, with a pleasant mineral component. It is easy to combine, it goes very well with fresh cheeses and light cured meats, but is recommended for dishes based on fish and shellfish. It is also recommended for risotto and white meats.
